BEETROOT RASAM, very healthy

INGREDIENTS

beetroot  200 gms, peeled & chopped into small pieces
tomatoes  4 big well mashed
salt to taste
pepper pdr. to taste
curry leaves 2 sprigs finely chopped
coriander leaves 1 tbsp
water as needed
oil 1 tsp
mustard seeds  1 tsp
asafoetida   1/8 tsp
turmeric pdr.  1/2 tsp

METHOD

in a heavy pan, heat oil, add mustard seeds, once it crackles, add curry leaves & asafoetida, saute well
add beetroot & enough water to cook it along with turmeric pdr.
once beetroot is nearly cooked , add mashed tomatoes, coriander leaves 1/2 tbsp., let it boil for few minutes
add pepper pdr. to taste, add water as required, let it come to a boil, remove, adding more coriander leaves.

ps- never let rasam boil well, once it is done, as it loses taste. so remove before it comes to a boil.
