HEALTHY PANCAKE WITH FILLING

INGREDIENTS

for filling

oil 1 tbsp
onion 1 big finely chopped
green chillies 2-3 finely chopped or as per taste
garlic  1 tsp finely chopped optional
carrot  1 small finely chopped/ grated
cauliflower finely chopped  1/2 cup
cabbage finely chopped  1/2 cup
peas  boiled  1/4 cup
oregano   1 tsp
pepper pdr.  1/2 tsp
chilli flakes   1/2 tsp
salt to taste
cheese grated   50 gm

METHOD
heat oil in a pan, add onion, garlic, chillies, saute lightly
add carrot, cabbage, cauliflower, saute till done
add peas, seasoning, cook for 2-3 minutes
add cheese, mix well till it melts, remove

For pancake
spinach leaves blanched  10
coriander leaves a small bunch
green chilli  1
salt to taste
ginger 1/2 "
grind all the above with little water
besan   2 tbsp
rice flour   2 tbsp
salt little
oil for making pancakes

METHOD
mix besan & rice flour in the spinach mixture, see that no lumps are there, add little salt
heat a griddle/ tava, add little oil, once hot, make thin pancakes, cook till brown on both sides
put filling in the centre, add some grated cheese, fold, cook for a minute
serve hot at once. this will make a meal by itself, as it has plenty of proteins, vitamins.
