STUFFED SPINACH WITH WHITE SAUCE

INGREDIENTS

spinach leaves real big ones ( blanch them, squeeze out the water & keep aside)

for stuffing

hung curd  1 cup
ginger-green chilli paste  1 tbsp
coriander leaves finely chopped 2 tbsp
finely chopped green onion  2 tbsp
salt to taste

mix all well, put about 1-2 tsp of filling on each leaf, roll it tightly.

for white sauce

butter  1 tbsp
milk 1 cup
wheat flour  1 tbsp ( I prefer wheat flour than all purpose flour/ maida) as it is healthy
salt & pepper pdr. to taste

heat butter, add flour, fry well, add milk, keep stirring so that no lumps are formed, once it comes to boil, add seasoning, remove.
to serve
In rectangular dish, spread the white sauce, place the rolled spinach leaves, put some grated cheese on top, place in preheated oven, till cheese melts around 180 deg. C for about 10-15 minutes.

ps- you may use mashed potatoes with above seasoning, leaving out hung curd, or with cottage cheese.paneer.
