INGREDIENTS
rice flour 2 cups
coriander leaves finely chopped 2 tbsp
green chillies finely chopped 1 tsp
ginger finely grated 1 tsp
hing 1/4 tsp
salt to taste
jeera/cumin 1/2 tsp
water to make batter
oil for cooking
METHOD
in a bowl, mix all the ingredients till water well, add water to make slightly thin batter
heat a heavy tava, you may grease 2 equal size banana leaves, on one, spread the batter, cover with the greased side of the leaf, cook on tava till the top leaf gets spots, turn over, you'll see the lower leaf had brown spots, after a while, turn the leaf again, remove the top leaf, turn the leaf upside down, so that the rice cheela is on the tava, cook putting little oil on both sides on low flame till
crisp. OR
you can directly smear some batter on the hot tava, cook on low flame covered smearing some oil, open after 3 minutes, turn smear some oil, cover and cook again till the other side is also cooked and crisp.
serve hot with chutney of your choice.
ps- you can add some finely chopped onion/ carrot, then you'll have to make it thicker like uttapam.
