POTATOES GHUGHRA/ GUJIAS/ SOMASI

INGREDIENTS

for stuffing
oil  1 tbsp
onion 1 big chopped fine
green chilli 1 chopped fine
potatoes 3 big boiled, peeled, mashed
turmeric pdr.  1/4 tsp
salt to taste
chilli pdr.  1 tsp
garam masala  1/2 tsp
coriander leaves  chopped  1 tbsp

heat oil, add onion and green chilli, fry till onion is light brown, add turmeric, salt, potatoes, chilli pdr. , garam masala pdr. mix well, fry for 3-4 minutes, remove, add coriander leaves, keep aside

for covering
maida/ all purpose flour  3/4 cup
oil 2 tsp
salt little
water as needed, make a dough
oil for frying

take small marble amount of dough, roll into a 5" diameter puri, put enough stuffing, fold into a semi-circle, start bending small portions from the corner till the other end to form a design
make all in the same way, deep fry in medium flame till light brown
drain well, serve with potato dip

for potato dip
chilli flakes  1/2- 1 tsp
salt to taste
potato boiled and mashed 1 small
water as needed
lime juice 1 tsp
grind all to a smooth paste adding water to get the desired consistency
break the gujias in small pieces, keep on a plate, pour the potato dip all over & serve at once.
