CHEESE CORN RICE PATTIES

Ingredients
2 cups of cooked rice
1 cup corn kernels
1 cup grated parmesan cheese
½ cup cottage cheese or paneer
1 chopped onion
2 green chillies
½ inch grated ginger,
1 cup corn flour
1 cup bread crumbs
Salt, pepper and chaat masala to taste.
oil for shallow frying
Method
Mix rice, corn, parmesan cheese, cottage cheese, onion, chilies, ginger, garlic, salt and herbs together to form a soft dough.
The starch in rice should suffice as the binding agent.
Make flat patties from the dough and refrigerate for an hour.
Prepare a thin dip with corn flour, water and a little salt.
Dip each ball into it and then roll the cheese corn ball in bread crumbs, if need be.
Shallow fry the patties till brown.
While serving, reheat them in the microwave, garnish with coriander leaves, grated cheese and serve hot with ketchup and sweet chutney/ green chutney.
