Hot chocolate soufflé



Hot chocolate soufflé
Cocoa 6 tbsp         butter 3 tbsp             flour 2 tbsp              milk ¾ cup
Sugar ½ cup          vanilla essence ½ tsp             eggs 3 separated        strong coffee 2 tsp

Method
1)      in a double boiler dissolve sugar, cocoa & 1 ½ tbsp butter/
2)      add salt & essence.
3)      In a saucepan, melt butter, add flour, stirring till it froths.
4)      Blend in hot milk with a whisk.
5)      Stir in cocoa, sugar mixture.
6)      Add the beaten egg yolks, mix well.
7)      Gradually fold in stiffly beaten egg whites.
8)      Pour into a deep greased soufflé dish.
9)      Bake in a pre-heated oven for 30- 35 minutes or until well risen & browned.
10)  Serve with whipped cream hot.
