Lemon Flan

 condensed milk 2 tins        butter 1 tbsp         lemon juice 3 tbsp      lemon rind 3 tbsp

digestive biscuits 3 1/2 packets      double cream 2 cups  

Method
1) crush the biscuits coarsely & mix with melted butter. spread evenly & bake in warm oven for 10 minutes.
2) beat cream, condensed milk till thick, add lemon juice & rind.
3) Once the biscuit has cooled, pour the cream on top & set in fridge.

ps- you may serve with fruits of your choice on top.
