Baked semolina


Baked semolina

Semolina 60 gm       milk ¾ l.             salt a pinch         sugar 3 tbsp       egg yolks 2
Egg whites 3         vanilla essence ½ tsp         butter 2 tbsp

Method
1)      melt butter, fry semolina till golden, stirring well continuously.
2)      Add a little of the milk, making it to a smooth paste.
3)      Add a pinch of salt.
4)      Boil rest of the milk with sugar, gradually tip in into the semolina paste, stirring to avoid any lumps.
5)      Return to heat & simmer until the mixture is thick.
6)      Beat egg yolks & whisk in the semolina mixture.
7)      Add essence & fold in stiffly beaten egg whites.
8)      Pour into a greased dish & bake for 20- 25 minutes or until the pudding is set.
