MUSHROOM VEGE BREAD PUDDING

INGREDIENTS
mushroom chopped 1 cup
butter  1 tbsp
oil  1 tbsp
garlic chopped 1 tsp
green chili finely chopped 1 tsp
onion 1 chopped big
capsicum all 3 colours if you've or green chopped 1
red chili pdr. 1-2 tsp as per taste
garam masala pdr. 1 tsp
salt to taste
 bread slices cut into squares or triangles, you need not cut the corners
milk 100 ml +fresh cream 100 ml if using eggs, beat it well along with eggs
eggs 2-3 ( those who don't eat eggs, can make healthy white sauce using butter, wheat flour, and milk)
grated cheese as needed

METHOD
heat oil and ghee, fry garlic, then lightly onion, capsicum and mushroom, add seasoning, mix well, remove. In a baking dish, grease well, arrange the bread slices in a layer to cover the bottom well
In a big bowl, if you're using eggs, then beat eggs well, add milk and cream, beat well, add the veges, coriander leaves, mix well, pour over the bread slices, cover the top with grated cheese and bake in a pre-heated oven at 180 deg. C for about 15 minutes till cheese melts and the top is well set. serve hot with spicy ketchup or some spicy green chutney.

 ps- those who are vegetarians/ vegans can use white sauce instead of eggs. To make the white sauce 2 tbsp of butter, melt, add 2 tbsp of wheat flour ( to be healthy, as normally people use all purpose flour. maida), fry well, then add 2 cups of milk, but little each time, so that no lumps are formed, so you've to keep whisking as you add milk, once all the milk is added, if you feel the sauce is too thick, then add some more milk, but it should be too thin, or else it will take too long to set and the bread will also get too soggy. Then vegans can use soy paneer instead of cheese on top.
