Black Forest Gateau

Ingredients

eggs  3
castor sugar   75 gm
flour  75 gm
cocoa pdr.  1 1/2 tsp
baking pdr.   1 1/2 tsp
hot water   2 tbsp
cream  250 ml
cashew nuts chopped  25 gm
cherries canned   8-10
plain chocolate bar grated   25 gm

Method

whisk the eggs and sugar in a bowl till the mixture is thick and pale
sift together flour, cocoa, baking pdr. and fold into the egg mixture with the water
grease and line a cake tin
bake in a pre-heated oven at 375 deg. F/  190 deg. C for 30 minutes or until well risen and firm
invert the cake on a rack to cool
whisk cream until stiff
divide the cake into 2 halves with a knife cutting sideways
on the lower half spoon 1/3 rd of the cream evenly
sprinkle some chopped cashew nuts
keep the other half of the cake on it, spread the top and sides with the remaining cream and sprinkle with grated chocolate
with a piping bag, pipe rosettes of cream on the cake and decorate with cherries
