Coffee Jelly

Ingredients

gelatin  6 1/2 tsp
sugar   6 1/2 tbsp
water  2 1/2 cups
instant coffee  2 1/2 tsp
banana  sliced  3
vanilla ice-cream  6 scoops
mint  6 sprigs to garnish

Method

take gelatin and sugar together in a vessel, add water and keep aside for 5 minutes
heat to melt gelatin and sugar, remove from heat, melt coffee in it, and cool
in the cake tin, line with a layer of banana, pour the jelly mixture, put remaining banana slices, pour the remaining jelly, keep in fridge to set
unmould by clipping in hot water
cut into square cubes of the coffee jelly
to serve, take a scoop of vaniil ice-cream in a bowl, put some jelly cubes and top with a sprig of mint
