Coconut milk pannacotta with tender coconut



Ingredients
gelatin   2  1/2 tsp
coconut milk  1 1/2 cups + 2 tbsp
sugar  1/2 cup
 zest  of 1 lemon
thick curd  2 cups
tender coconut slivers  1 cup
pista or any other nut powdered 1/2 cup and mixed with 1 tsp of icing sugar

Method
in a small bow,, sprinkle some gelatin over 1/2 a cup of coconut milk and set aside for 10 minutes until well moistened
pour the remaining coconut milk into a pan, add lemon zest, sugar and stir over a gently flame until the sugar dissolves
remove from heat, add the gelatin mixture, stir well for 3-5 minutes
this is very important
pour the mixture into a large bowl and let it cool
whisk the yoghurt until well blended
transfer the mixture into individual bowls, cover with cling film and refrigerate for about 8 hours
top with slivers of tender coconut and powdered nuts
