Tomato Basil Pie

Ingredients

all purpose flour/ maida  1 cup
salt 1/4 tsp
baking pdr   1 tsp
olive oil  1 tbsp
water as needed

mix the dry ing. add oil, mix well, then add water the make a soft dough

for filling
tomato cut into thick rounds  `5-20
cheese grated  around  1 cup
olive oil
basil chopped  3-4 tbsp
salt

Method
 divide the dough into 2 parts, roll out into big rounds of medium thickness, slightly poke the dough all over with a fork
place the rolled out dough on a tray dusted  with flour
put the tomatoes in the centre to form a circle, sprinkle some salt, pepper pdr on it, then spread enough cheese, spread some basil leaves on it, then fold the excess dough all around to form a circle, you can pinch them too, then in the centre, after folding the dough, place a tomato slice, put some cheese on it, brush olive oil all around
bake in a pre-heated oven at 180 deg. C for 10 minutes
serve with some tomato slices on which you spread some cheese, basil leaves, sprinkle olive oil and serve hot sliced into wedges
