Mango Mania

Ingredients

arrowroot/ digestive biscuits 2 cups crushes approximately
unsalted butter  100 gm melted
cream cheese  1 tin
whipped cream  1 cup
mango pulp  1 1/2 cups
mango cut into small bits  1- 1 1/2 cups
gelatin  1 tbsp
hot water  1/2 cup
sugar  1/2 cup

Method

powder the biscuits in a mixie/ food processor
add melted butter and beat it again until the mixture is well mixed
press this in the bottom of individual glasses
refrigerate for 10 minutes
mix the cream cheese, cream and sugar in a bowl till well blended
add mango pieces
add gelatin to half cup of hot water, stir till it dissolves
add it to the mango puree, stir well
keep half of this mixture aside, add the rest to the cream cheese mixture
stir gently till it is well blended
take out the glasses from the fridge, pour the cream mixture,return to the fridge for 30 minutes
for the topping, pour the mango mixture gently, so that the layers don't mix
refrigerate overnight, serve it chilled the next day
