BEETROOT- PASTA MANCHURIAN WITH STIR FRIED VEGETABLES

INGREDIENTS

pasta cooked  2 cups
beetroot grated  1/2 cup
potatoes  boiled and mashed  1/2 cup
spring onion cut fine  1/2 cup
chilli-ginger-garlic paste   1-2 tsp
soya sauce  1 tsp
salt to taste
cornflour
oil

for fried vegetables

corn  1/2 cup
green capsicum  1/4 cup
yellow capsicum   1/4 cup
red capsicum   1/4 cup
spring onion chopped   1/4 cup
soya sauce  1 tsp
vinegar  1 tsp
salt to taste
oil


METHOD for manchurian
in a bowl, put pasta, mash well, add rest of the ingredients, except cornflour and oil
make small balls, roll in corn flour, deep fry in hot oil, drain and keep aside

for fried vege
in a pan, heat 2=3 tsp oil, add corn, fry for a minute, add the paste, fry well, add the capsicum, fry well, add the sauce, vinegar, spring onion, salt, fry for 2 minutes
remove, put on a plate, keep the manchurian on top and serve hot
