BALSAMIC GUAVA AND FETA SALAD

INGREDIENTS

guava cut into small pieces   120 gm
mixed lettuce leaves, cleaned and torn into small pieces in iced water and drained   160 gm
fresh parsley   10 gm
olive oil    60 ml
balsamic vinegar   30 ml
star anise roasted and powdered   1
feta cheese   60 gm
crushed black pepper   1 tsp
salt to taste
toasted bread   4 slices

METHOD

flatten the bread slices into thin sheets using a rolling pin
cut them into desired shape and toast them in an oven at 130 deg. C
prepare the dressing by mixing vinegar, olive oil, star anise pdr., salt, parsley and pepper pdr.
toss the lettuce leaves along with diced guava and the prepared dressing.
place on serving plates and add the feta cheese on top
serve along with toasted bread slices.
