ALMOND ICE-CREAM

INGREDIENTS
MILK  6 CUPS
SUGAR  1 1/2 CUPS
CREAM  1/2 CUP
ALMONDS  1/4 CUP
CORNFLOUR  2 tbsp
CHINA GRASS 2 tsp
saffron   1 tsp
cardamom pdr.   1 tsp

METHOD
soak China grass in 1/2 cup of warm milk
soak saffron in 1 tbsp of hot milk
soak, peel the almonds and grind to a fine paste
thicken the milk till it is 1/2 its quantity
mix the ground almonds with cornflour, add a little milk, pour into simmering milk
cook till thick, stirring all the time
reduce flame, add sugar slowly, stir till it dissolves
remove, when cool, stir in China grass, saffron, cream and cardamom pdr.
freeze  in a covered box till set.
you can serve with some roasted almonds on top.
