Ingredients:
6 tbsp all-purpose flour
2 tbsp brown sugar
1/4 tbsp baking powder
1/4 tbsp salt
1/8 tbsp cinnamon
pdr
1/8 tbsp nutmeg
6 tbsp buttermilk
2 tbsp vegetable oil
1/4 tbsp vanilla
3 tbsp finely grated carrot
1 tbsp almonds or other desired nuts
1 tbsp raisins
Instructions:
Add the sifted flour, brown sugar, baking powder, salt and cinnamon to
a small bowl or dish. Mix well with a whisk or fork.
In a separate dish, mix together the buttermilk, oil, vanilla and
grated carrot. Mix using a spoon.
Add the flour mixture to the liquid ingredients.
Stir in the chopped almonds and raisins.
Pour the resulting batter into a large mug and microwave on high power
for around 2 minutes.
Check the mixture and microwave for another 30
seconds if it needs more time.
Leave it to stand for a minute before eating.
