VEGETABLE-COTTAGE CHEESE/PANEER STUFFED GUJIAS

INGREDIENTS
for stuffing
oil   2 tsp & also for deep frying
mustard seeds   1 tsp
turmeric pdr.  1/2 tsp
ginger-chilli paste  2 tsp
paneer crumbled  1/2 cup
onion finely chopped  1/2 cup
capsicum finely chopped  1/4 cup
carrot grated  1/2 cup
chaat masala 1/2 tsp
salt to taste
fresh coriander leaves finely chopped  2 tbsp

for covering
maida/ all purpose flour  200 gm
salt to taste
corn flour  2 tbsp
milk little
water as needed
make a soft dough with the above ingredients, keep it covered.


METHOD

in a pan, heat oil, add mustard seeds, once it crackles, add onion, fry till it gets light pink
add capsicum, fry for 2 minutes, add carrot & the paste fry for 3 minutes
add the crumbled paneer & salt to taste mix well
add chaat masala, coriander leaves, mix well
remove & cool.
take small balls, roll into flat puris/ rounds about 5" big
put the filling in the centre, fold into semi-circle, seal well, either by putting some water around the edges, or cut with the gujia cutter, or fold the corners little by little pinching it, also making a nice design, or press all around with fork, whichever is easy for you & but make sure it is well sealed.'
fry in hot oil till brown, drain & serve hot with ketchup. chutney of your choice.
