TOMATO RICE

INGREDIENTS

tomatoes chopped  small  1 cup
red chilli pdr.   1 tsp or to taste
turmeric pdr.   1/2 tsp
hing/asafoetida   1/4 tsp
peanuts   2 tbsp
curry leaves 1 sprig finely chopped
fresh coriander leaves finely chopped  2 tbsp
salt to taste
oil 1 tbsp
ghee 1 tbsp
cumin/jeera  1 tsp
dhania/ coriander pdr.  2 tsp
garam masala pdr.  1/2 tsp ( optional)
garlic pearls  3-4 finely chopped ( optional)
ginger 1" finely chopped
cooked rice  1 big bowl
onion finely chopped 1 big

METHOD

in a heavy pan, heat oil & ghee, add cumin, once it crackles,add peanuts, roast till they're brown
add hing, curry leaves, ginger & garlic, fry well for 1 minute
add onion, fry till light brown, cook on low flame,add tomatoes, turmeric, all the powders, little salt, fry till tomatoes are well mashed, add 1/2 of the coriander leaves, cook for another minute, till oil floats in top, add rice & salt mix well, keep covered, adding little more ghee, for 2 minutes on sim.
mix well, garnish with rest of the coriander leaves, serve hot with potato raita & chips/ papad.
