SPICY SWEET POTATO CAKE

INGREDIENTS

butter   1  cup
light brown sugar  1 pound/ 400 gm
eggs   3
vanilla   essence   1 tsp
cooked & mashed sweet potato 1 cup
flour   3 cups
cinnamon pdr.  1 tsp
baking soda   2 tsp
milk   1/2 cup

METHOD

Cream butter; add sugar gradually, beating until light and fluffy. 
Add eggs one at time, beating well after each addition. 
Beat in vanilla, and then beat in sweet potato. 
Sift together flour, cinnamon and soda. 
Add to creamed mixture alternately with milk. 
Pour batter into a big  greased and floured pan.
 Bake at 350 degrees F. until firm to touch, about 40-45 minutes. 
Let cool in pans 5 minutes, then invert onto racks to finish cooling. Cool completely before layering and icing.
