TOMATO-CORIANDER SHORBA

INGREDIENTS

butter  1 tbsp
curry leaves 1 sprig
besan   1 tbsp
tomatoes 4 big chopped
chilli pdr.  1 tsp
salt to taste
water about 2 glasses
sugar  1 tsp
lemon juice   1 tsp

for seasoning
ghee   1/2 tsp
mustard seeds   1/8 tsp
cumin  1/4 tsp
curry leaves few

fresh coriander leaves finely chopped  3 tbsp for garnishing

METHOD

add butter in a pan, add curry leaves, saute for a minute on low flame
add besan, fry well for a minute, add chopped tomatoes
add chilli pdr., salt, cook till tomatoes are well cooked
add 1/2 cup water, let it come to a boil
remove, cool, then blend it in a mixie, strain it
cook it again adding sugar, pepper pdr., let it simmer for 2-3 minutes
in a small pan/ kadai, add ghee, add mustard seeds, once it crackles, add cumin, curry leaves
add to boiling shorba, mix well, remove, add lime juice & serve
to serve, pour in small bowl, garnish with chopped coriander leaves.
