HEALTHY APPAM ( Spicy)



INGREDIENTS
Suji / semolina 4 tbsp
Maize flour 1 tbsp
Coriander leaves chopped 1 tbsp
Spring onion chopped 1 tbsp
Spinach chopped 1 tbsp
Methi leaves finely chopped 1 tbsp
Buttermilk as needed to make a thick batter
Salt to taste
Green garlic 1 tsp finely chopped
Green chili paste 1 tsp or finely chopped to taste
Oil as needed for frying
For seasoning
Oil 1 tsp
Mustard seeds ½ tsp
Urad dal 2 tsp
Hing little
Chili pdr. ½ tsp or to taste
Baking soda ¼ tsp

METHOD
In a bowl mix all the ingredients, except baking soda, keep aside for 10 minutes
Heat oil, add mustard seeds, once it crackles, add urad dal, hing, chili pdr.,
Pour over the prepared mixture along with baking soda and vinegar
When you use non-stick appam vessel, you need less oil, pour in appams, cook covered, using as little oil as possible in a medium flame. Turn and cook covered again till brown on both sides.
