Soya granules stuffed paranthas

INGREDIENTS

whole wheat flour as needed
soya granules as needed soaked, drained
onion 1 finely chopped
salt to taste
green chilli paste 1-2 tsp as per taste
ginger paste  1 tsp
cumin/ carom ( ajwain)    1 tsp
oil as needed
tomato puree  2-3 tbsp
turmeric pdr.  1/4 tsp
fresh coriander leaves finely chopped 2-3 tbsp

METHOD

in a pan, add 2 tablespoons of oil, add cumin/ ajwain, once it crackles, add onion, fry well, add the pastes, fry well again till the raw smell disappears
add soya granules, cook adding little turmeric pdr. well for 3 minutes on low flame stirring well
add tomato puree, cook till it gets dry, add salt to taste along with chopped coriander leaves, mix well, cool
make dough like for roti, roll out to about 4", put enough stuffing, bring together from all sides to form a ball, roll out again to a thick parantha, carefully without the stuffing coming out
heat a tava/ griddle, put the parantha, cook on medium flame till it gets dark brown spots on each side, adding little oil/ ghee as desired
serve hot with sliced onion & lime, or pickle, or some vegetable raita of your choice.
this can be had for breakfast, lunch/ dinner ! or packed and taken to school/ office too.

ps- it is a very healthy protein rich paranthas, if it is eaten with vegetable raita, it will become a complete meal, as it will have carbs, protein, vitamins, minerals, fibre, calcium.
