Cashew Burfi- microwave

INGREDIENTS

cashew nuts  100 gm

sugar   250 gm
ghee   1/3 cup
milk   1/2 cup
cardamom pdr.  1/2 tsp
saffron   1/4 tsp

METHOD

warm saffron slightly & powder it
soak cashews in milk for an hour & grind to a smooth paste
in microwave safe dish, mix sugar with 1/2 cup water, stir well
micro high for 3-4 minutes to dissolve sugar, stirring once in between
micro high ghee in a cup for 1 minute
to the sugar syrup, add cashew paste & hot ghee, mix well
micro high for 10 minutes, stirring well thoroughly in between till it becomes soft balls, if not, micro high for another 5 minutes, here again, according the each microwave, time can vary drastically, so one should keep a watch on it.
add cardamom pdr, saffron, mix well, spread on a greased plate, cut into pieces
once well set & cool, remove the pieces, store in a clean air-tight container.
