APPLE CINNAMON MUFFINS

INGREDIENTS

maida/ all purpose flour --  1 1/2 cups
sugar  1/3 cup
baking pdr.   2 tsp
cinnamon pdr. divided   1 tsp
salt  1/2 tsp
egg    1
milk   1/2 cup
apple peeled, cored, finely chopped    1
butter melted   4 tbsp
nuts finely chopped   1/3 cup ( walnuts, pecans, almonds, cashews)
brown sugar   1/3 cup

METHOD

preheat oven to 375 deg. F or roughly  200 deg. C
spray muffin tin with cooking spray
in a large bowl, combine flour, sugar,baking pdr., cinnamon 1/2 tsp & salt.
in a medium bowl, beat together, egg & milk, stir in chopped apple, melted butter
add all at once to flour mixture, stir until mixed
the batter will be stiff
spoon into the sprayed muffin cups approximately 2/3 rds
mix chopped nuts, brown sugar, remaining cinnamon to make topping, sprinkle evenly on muffins 
bake for 15-20 minutes, when you insert a knife in the centre of the muffin, it will come out clean.
temperature & timing varies from oven to oven, also depending on the size, so better to be watchful after 10 minutes itself.
