Coconut Rava Pongal/ kichdi

INGREDIENTS

rava/semolina/ suji  1 cup
moong da;  1/2 cup
ginger paste  1 tsp
cumin  1 tsp
curry leaves few
peppercorns crushed  1/4 tsp
ghee as needed
salt to taste
coconut grated  1 cup
nuts as needed

METHOD
Fry a cup of rava till it is hot & a nice aroma comes
Pour it into a flat bottomed dish and allow it to cool.
In the mean time, pressure-cook half a cup of moong dal till soft.( adding more than 2 cups of water, as the excess water will be needed to cook the rava)
Fry a teaspoon each of ginger paste, cumin seeds, black peppercorn and curry leaves all together in a little ghee.
Once roasted, add the dal and stir to mix in the spices.
Add salt to taste.
Pour the rava slowly and keep stirring so that no lumps form.
Once the rava has mixed into the dal mixture, add a cup of grated coconut and stir.
Remove from flame after a couple of minutes.
Garnish with  cashew.
