Sabudana & carrot Kheer

Sabudana 1 cup
carrots grated 1 cup 
milk 500 ml
sugar 3-4 tbsp

In a pressure cooker, you can cook sabudana & carrots for 2 whistles, in case you want to save time, or you can cook in gas, which is troublesome, as you've to keep watching & stirring it all the time. I pressure cooked mine, then added milk, boiled well for some time, then added sugar to taste, boiled till sugar dissolved. removed, garnishes with nuts & raisins by frying in wee bit of ghee.

ps= there is no hard & fast rule for the amount of sabudana or carrots that you want to add, it depends on how thick you want, the quantity that you want etc.

ps- for variation, you may add some dates along with carrots when you cook, then you'll need even less sugar. for diabetic patients, remove once the milk has thickened, then add sugar free substitute, as I did for my hubby.
