MIXED PEPPER RELISH

INGREDIENTS
olive oil   3 tbsp
onion 1 chopped
red capsicums    2 de-seeded & chopped
green capsicum 1 de-seeded & chopped
garlic  3 cloves finely chopped
chilli pdr.  1/2 tsp
honey  2 tbsp
malt vinegar  90 ml
tomato juice  90 ml
salt to taste

METHOD

heat oil in a pan, add onion, capsicum, fry for 10 minutes, stirring occasionally.
add garlic, chilli pdr., honey, vinegar, tomato juice, salt to taste, simmer for 5 minutes or until the mixture is soft & pulpy.
cool preserve.

This goes well with burgers, sandwiches, roti, idli, dosa.
