SWEET AND SPICY TOMATO CHUTNEY

INGREDIENTS

tomatoes chopped finely   1/2 kg
cumin seeds    90 gm
sugar  375 gm
mustard oil   375 ml  or any vegetable oil
salt   90 gm
ginger  180 gm
garlic  60 gm
dry red chillies coarsely ground   90 gm
mustard seeds    90 gm
vinegar   375 ml

METHOD

grind together in little vinegar - ginger, garlic, chillies, cumin seeds.
coarsely powder the mustard seeds.
heat oil, when it starts smoking, add ground spices, cook till the raw smell disappears.
add tomatoes, sugar, salt & remaining vinegar & cook on low flame, until the oil floats on top.
cool, bottle in a clean & dry bottles. store in fridge.
