BLACK JAMUN

INGREDIENTS

cottage cheese/paneer   100 gm
khoya/mawa ( thickened milk)   70 gm
sugar 100 gm
water  50 gm
rose water 2 tsp
cardamom pdr  1/2 tsp
maida/ all purpose flour    2 tsp heaped
nuts- almonds, pistachios, cashew nuts powdered  2 tbsp
sugar  2 tsp
ghee for frying

METHOD

in a big plate, with your palm nicely knead paneer till it becomes very soft
then crush khoya, knead well, then mix with paneer
keep aside about 2 tbsp of this mixture for filling
to the rest, add flour, mix well
for the filling, in the 2 tbsp of paneer mixture, add cardamom pdr, powdered nuts, sugar, mix well
make small balls of the filling mixture
make same no. of balls with the paneer mixture, flatten each ball, keep a filling ball, cover it, then roll it well so that everything is completely covered
deep fry in oil, which should not be too hot, by gently placing each ball, then with the spoon, put ghee over it, so that it is well covered, then gently turn it, once they're dark brown on all sides, drain & remove.
while still hot, prick them all well on all sides with a tooth pick, so that when you immerse them in hot syrup, it will get soaked till inside well.

to make sugar syrup, add sugar & water in a vessel, keep stirring till sugar melts, then add 1-2 tsp milk to remove the scums, then boil it till you get  2 string consistency, add rose water.
soak the jamuns in hot syrup till they get soft & well soaked, can be for about 30 minutes.
to serve, you may decorate jamuns with finely chopped nuts on each.
