INSTANT IDLI WITH PEANUT CHUTNEY



INGREDIENTS
FOR IDLI
Suji/ rava 1 cup roast it till light brown
Oats ½ cup roast lightly
Oil 2 tsp
Salt to taste
Curd ½ cup
Water as needed
Fruit salt 1tsp
FOR PEANUT CHUTNEY
Peanuts roasted 2 tbsp
Green chilies to taste
Tamarind pulp 1 tbsp
Salt to taste
Onion 2 tbsp finely chopped
Ginger ½ “finely chopped
Garlic 3 chopped (optional)
Water as needed to grind

METHOD
For idli-
Mix the roasted rava and oats with salt, baking pdr, baking soda well, add curd, mix well, add enough water to make idli batter.
Rest it for 15 minutes, at times, rava may absorb more water, then add little water, fruit salt, oil, mix well. Pour into greased idli plates, steam for 10-12 minutes on medium flame.
For peanut chutney
Grind all the ingredients together to a fine paste. Heat 1 tsp oil, add mustard seeds, once it crackles, add little hing, few curry leaves, pour over chutney and serve with hot idlis.
