CARROT PUDDING



INGREDIENTS
Carrot chopped 1 cup
Carrot grated fine 2 tbsp
Agar-agar/ china grass 1 cup
Milk  ½ l.
Condensed milk ½ cup
Sugar  ½ cup
Cinnamon pdr. ¼ tsp
Cardamom pdr. ¼ tsp
Nuts chopped ¼ cup
Raisins 2 tbsp

METHOD
Boil chopped carrots in enough water till soft. Cool and blend it.
Cook agar agar with enough water over double boiler or in microwave
Boil milk in a heavy pan, add condensed milk, sugar, carrot paste, cinnamon and cardamom pdr., half of nuts and raisins, cook till thick, add agar-agar and grated carrot, cook for another minute, off gas, cool and refrigerate and serve garnish with remaining nuts and raisins.
