ALMOND SEMOLINA BARFI



INGREDIENTS
Rava/ semolina 1 cup
Ghee/ clarified butter 4-6 tbsp
Milk 2 ¼ cups
Saffron little
Sugar 1 ¼ cup
Roasted almonds chopped ½ cup

METHOD
Heat  3 tbsp ghee in a heavy pan/ kadai/ non-stick pan, roast rava till nice aroma comes.
In the mean time boil milk with little saffron, add to roasted rava, cook till milk and sugar are well mixed. 
Keep stirring, adding little more ghee till thick adding almonds chopped, reserving few for garnishing.
Once thick pour in a greased tray/ plate, sprinkle almonds on top, press lightly.

Allow it to set for a couple of hours, cut into desired shapes and serve.
