SWEET PULAO

INGREDIENTS

cooked rice 2 cups
ghee 2 tbsp
saffron few strands soaked in 1 tsp milk ( optional)
cashew nuts chopped 1 tbsp
raisins 1 tbsp
powdered sugar 1/2 cup or more as per taste ( sugar substitute can be used)
fresh grated coconut 1/4 cup
cardamom powder 1 tsp

METHOD
heat ghee in a pan, roast nuts, once light golden, add raisins, once they puff up, remove, few nuts and raisins to decorate and serve. Add rice to rest of the nuts mixture, stir well, add sugar, mix well, as the sugar dissolves, the rice may look little watery, don't worry, keep the flame low, keep stirring, add coconut and if you like plain white, you need not add the saffron milk, or else add, mix well adding cardamom powder.
Remove, serve decorated with the fried nuts and raisins.

ps- if you want a healthier version, then add jaggery instead of sugar, then no need to add saffron, as it will automatically give you light brown colour.
