INSTANT MALPUA

 INGREDIENTS

Milk  pdr ½ cup

Maida 1 cup

Suji  2 tbsp

Saunf ½ tsp

MILK 3/4 CUP +  as needed 

Sugar syrup

sugar 1 cup

water 1/2 cup + 2 tbsp

milk 2 tbsp to remove scum

saffron a pinch

cardamom pdr 1/4 tsp

lemon juice 2 tsp

oil for shallow frying

nuts for garnishing


PREPARATIONS

Milk ¾ cup, add maida , saunf and  suji whisk, if need be add more milk whisk for 5 minutes

Cover and rest thick batter for 20 minutes. Batter will be of thick poring consistency( idli batter)

In a pan add 1 cup sugar, ½ cup water + 2 tbsp water, dissolve sugar stirring

add milk, once it boils well, remove scum.

Let it boil well for 5 minutes, add saffron and cardamom pdr  mix well

Remove the syrup, add lemon juice mix well, cover and keep aside

Now heat oil, in medium hot oil, fry small malpuas till brown on both sides,  strain and dip in syrup for 3-4 minutes, drain and garnish with nuts.
