SOYA BEAN AND MIXED VEGETABLES


INGREDIENTS
green peas  700 gms
cauliflower   200 gms
beans   200 gms
cooked soya chunks   100 gms
onion   1 big chopped fine
curd  1/2 cup
green chillies 4-5 or to taste
cumin   2 tsp
ginger chopped  1 tsp
garlic 3 cloves minced
turmeric pdr.  1/2 tsp
chilli pdr.  1/2 tsp or to taste
coriander pdr.  1/2 tsp
garam masala pdr.  1/2 tsp
sugar 1/2 tsp
coriander leaves finely chopped   2 tbsp
oil as needed
salt to taste

METHOD

cut vegetables into small pieces
grind together onion, green chillies, coriander, cumin, turmeric pdr., chilli pdr., ginger & garlic to a fine paste.
heat oil, fry the paste till it turns light brown on low flame
add sugar & salt, vegetables, soy chunks, well beaten curd & 1/2 cup water to cook till tender.
add garam masala pdr., coriander leaves 1 tbsp, mix well
remove, garnish with rest of the coriander leaves & serve hot with roti/ bread/ rice
