Soak half cup sago for 10 minutes
Peel the ripe pumpkin and grate it finely.
Turn a flame of gas on and put a cooker on it.
Add 2 tbsp of ghee and allow it to heat.
Add 3 to 4 cloves let it roast for a while
Now add grated pumpkin into the cooker and saute it for 2 to 3 minutes.
Now add soaked sago into the cooker, saute it for a while.
Add half cup of water into the cooker,
mix well and close the lid, cook till 2 whistles and then open the lid once the pressure is released.
Add 250 ml of milk to the cooker and continue stirring so that sago do not stick at the bottom.
Once the sago is cooked well, add 250 ml
milk again and allow it to reduce as per your required consistency.
Now add half cup (or little less than
that) of sugar and cook for 2 to three minutes till sugar dissolves completely.
Pumpkin kheer is ready. Allow it to cool well and serve it.
Garnish with roasted chopped nuts and raisins.
