Ingredients:
1 cup unsalted butter, softened
½ cup powdered sugar (plus more for dusting)
1 tsp vanilla extract
2 cups all-purpose flour
1 cup finely ground pistachios
¼ tsp salt
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and ½ cup powdered sugar until smooth and fluffy.
Add in the vanilla extract and mix until well combined.
Gradually add the flour, ground pistachios, and salt, mixing just until the dough comes together.
Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.
Bake for 12-15 minutes or until the cookies are lightly golden on the bottom.
Allow the cookies to cool slightly, then roll them in powdered sugar while they are still warm.
Once cooled completely, give the cookies a second dusting of powdered sugar for extra sweetness.
