Pineapple appam with coconut saffron milk

 Ingredients

pineapple slices cut  1/2 cup

fresh grated coconut  1/2 cup

jaggery pdr 1/4 cup or more as per taste

rice flour 1/2 cup + if needed

baking pdr  1/2 tsp

salt a pinch

oil for cooking 

cardamom pdr  1 tsp


Method

grind pineapple slices with some coconut

check how it is done, add jaggery pdr and more coconut grind no water

remove in a bowl, add cardamom pdr, salt, rice flour mix well

heat an appam or poaching pan

add baking pdr to the thick batter, mix/ whisk well

add oil in each hole of the appam pan, add a tbsp of batter in each hole, cook on low- medium heat, till brown down, then flip them to cook on the other side.

while it is cooking, heat coconut milk 1 cup in a pan adding some saffron strands, mix well

add about 2 tbsp of sugar or more if desired, mix well, once hot remove as you can get saffron smell

in small serving glasses, add some saffron milk, put an appam in a long wooden stick or a big toothpick, place it over the milk, as tooth pick can rest on top of the glass.
