The recipes posted here are very simple, with no hard & fast rule, as I love to cook a variety but with ease. My dishes are such that it is nutritious & easy to cook. Navratri’s Special Potato Quiche
Ingredients
Method
Boil the potatoes, peel and mash them well or grate them.
Mix 1 tsp desi ghee, 2-3 tsp milk,
cornflour, salt, pepper, roasted jeera powder, green chilies and finely
chopped coriander leaves. Mix it well with the mashed potatoes.
Grease an eight-inch round pie dish and dust it well with cornflour.
Spread the potato mixture evenly
covering the sides well. Flute the sides with the help of a fork.
Bake in a pre-heated oven for 10-12 minutes till it becomes golden brown and crisp.
For Filling
In one non-stick pan, sauté the ginger and tomatoes in desi ghee till slightly soft.
Add mashed paneer, salt, pepper,
cinnamon powder, green chilies, coriander leaves and cream. Mix well to
form a creamy and soft mixture.
Add one tsp cornflour so that the mixture is not too liquid.
Spread this cottage cheese mixture on
the potato quiche crust and bake for 10-15 minutes till lightly brown in
colour.
Serve hot. Your yummy and innovative Navratri Quiche is ready.
