Ingredients
1 cup all-purpose flour
2 tbsp yogurt
1/2 tsp baking soda
1/2 tsp turmeric/ kesar powder
1/2 cup water (adjust for batter consistency)
2 cups sugar
1 cup water (for syrup)
1/4 tsp cardamom powder
Oil (for frying)
Method
In
a mixing bowl, combine all-purpose flour, yogurt, baking soda, turmeric
powder, and gradually add water to form a smooth, thick batter. Let it
rest for 30 minutes.
Meanwhile, prepare the sugar syrup by
boiling 2 cups of sugar with 1 cup of water until the sugar dissolves
completely. Add cardamom powder and simmer for 5 minutes.
Heat oil in a deep frying pan over medium heat.
Fill a piping bag or squeeze bottle with the batter.
When the oil is hot, pipe the batter into swirling shapes (spirals) into the oil, frying until golden brown on both sides.
Remove
jalebi from the oil, allowing excess oil to drain, then immediately
immerse them in warm sugar syrup for about 30 seconds.
Transfer to a serving plate and enjoy the warm, crispy jalebis!
ps- if you don't have squeeze bottle or piping bag, just take a thick plastic bag, add the batter, make a small hole in a corner, through that make circles, then keep it in a glass to prevent it falling down.
