Important tip to get perfect kichdi is wash well sabudana and for 1 cup sabudana, add 3/4 cup water only to soak for 3 hours.
In a bowl add sabudana, coarsely crushed peanuts 1/4 cup
add rock salt little
salt to taste
sugar 2 tbsp, mix all well
Heat 2 tbsp oil in a kadai
add jeera 1/2 tsp, curry leaves chopped 1 tsp
add hing, mix well, then add boiled and chopped potato 1 big mix well adding
green chilies chopped to taste and 1 tsp grated or finely chopped ginger, fry all well
then add the sabudana mixture, mix well for 2-3 minutes
then cover the kadai with a lid and cook for 5-7 minutes, if sabudana has changed colour, then it is cooked
keep mixing well, then add chopped coriander leaves, remove from gas and add lime juice to taste
add some more crushed peanuts and serve hot.
ps- if you're not making for fasting, you can add onion finely chopped too.
