Cauliflower Fritters

Ingredients : 
 
Cauliflower - 1 medium head (roughly chopped)
 
 Onion - 1 small (roughly chopped) 
 
Olive oil - 2 tbsp. 
 
Parmesan cheese - 3 tbsp. (grated) 
 
Eggs - 2 (lightly beaten) 
 
All-Purpose flour - 1/2 cup 
 
Flat-leaf parsley - 1 tbsp. (finely chopped) 
 
Garlic powder - 1/2 tsp. 
 
Salt and Pepper - to taste 
 
Neutral oil - for frying (you can also use butter) 
 
Method of preparing the Fritters: 
 
In a food processor, process the cauliflower florets and the onions until they are 'riced,' or finely chopped but not completely pureed. 
 
Transfer the vegetables to a large microwave-safe bowl, seal with a lid or plastic wrap, and microwave on high for 3-4 minutes. 
 
Then remove from the microwave but leave the lid and let vegetables steam for 5 more minutes. 
 
Remove the cover from the vegetables, then fold in the rest of the ingredients: olive oil, parmesan, eggs, flour, chopped parsley, garlic powder, salt, and pepper. 
 
Mix until a homogenous batter forms. 
 
Heat some butter or neutral oil in a large skillet over medium heat. 
 
When the oil is hot but not smoking, spoon the cauliflower batter onto the hot skillet and press down on the fritter with the spoon to flatten it until it's about 1/2-inch thick. 
 
The fritters are ready to flip when they're golden brown on the edges, this should take about 3 minutes. 
 
Once fully cooked through and golden brown, transfer the fritters onto a plate lined with paper towels (to soak up the excess oil). 
 
Repeat the same process with the remainder of the batter. 
 
This recipe makes around 15-16 fritters depending on the size of your cauliflower. 
 
Serve cauliflower fritters fresh with sour cream or Greek yogurt on the side.

Milk Barfi

  • INGREDIENTS 
  •  
  • milk powder (full cream)  cup

  • sugar   ¾ cup

  • milk   1 cup
  •  
  • Ghee/ clarified butter  1/4 cup

  • pistachios (chopped)   3 tbsp


  • Instructions 

    • firstly, in a bowl take 2½ cup milk powder, ¾ cup sugar and 1 cup milk.
    • whisk and mix well until everything is well combined.
    • transfer the mixture into large kadai. recommend using nonstick pan to prevent from sticking
    • also add ¼ cup ghee and mix well on low flame.
    • keep stirring on low flame until the mixture thickens.
    • the mixture will hold the shape and starts to separate the pan after 10 minutes.
    • do not overcook, as the barfi will turn hard. and if the mixture is under-cooked then it turns chewy.
    • transfer the barfi dough into the tray lined with baking paper.
    • press gently, making sure its leveled up.
    • top with few chopped pistachios and press gently.
    • cover and refrigerate for 1 hour or until it sets completely.
    • after 1 hour, cut with sharp knife into desired shape, once cool, store.
    • finally, milk barfi recipe tastes great for a week when stored in an airtight container.

Turmeric Ginger Tea

As winter is approaching, you want to drink something hot, want to avoid caffeine, then this turmeric--ginger tea is the best, as it is anti-inflammatory, anti-bacterial, anti-fungal, soothes the stomach, especially if you're feeling heavy, it will aid in digestion.
 
Ingredients-
 
Water - 1 cup (filtered) 
 
Ginger root - 1 tsp. (grated fresh) 
 
Turmeric root - 1 tsp. 
 
Honey - 1 tsp. 
 
Black pepper - 1 tsp. 
 
Method of preparing the Tea: 
 
Boil the water in a saucepan or pot. Add the grated turmeric and ginger to the water, then turn the heat down to a simmer. 
 
Allow the mixture to stand for 10-15 minutes. Strain the tea into a teapot. 
 
Add black pepper and honey and enjoy!

Savory Veggie Corn Cheese Muffins

 Ingredients

  • 1 cup All purpose flour/maida
  • 1/2 cup sweet corn kernels
  • 1/2 cup chopped capsicum
  • 1/4 cup chopped coriander
  • 1/4 cup chopped onion
  • 1/2 cup grated cheese
  • 2 tablespoon chili flakes
  • 3 tablespoon Italian seasonings
  • 1/2 teaspoon salt
  • 1 Egg
  • 3/4 cup yogurt
  • 1/4 cup olive oil

Instructions

  • Take two bowls. I will say, bowl-1 and bowl-2.
  • In bowl-1, beat eat the egg and mix yogurt. Add olive oil, mix and keep aside.
  • In bowl-2, mix the flour and other ingredients and keep aside.
  • Add the ingredients from bowl-1 to bowl-2 mixing slowly.
  • Pre-heat the microwave in convection mode to 180 degree for 5 minutes.
  • Grease the muffin tray.
  • Spoon the muffin tray with the mixture. Brush some olive oil on top of the muffin mixture. This gives it a golden colour. Bake for 20 minutes or until golden brown.  Note- For the  vegetarians, I feel the same recipe minus egg, beating curd with little vinegar and baking soda should be good enough to try. As I don't have muffin tray, maybe shall try in a baking dish and tell you folks soon. Good luck. Try experimenting with what you're comfortable with.
