Zucchini Noodles

 What is zucchini?

 Zucchini also known as courgette, zucchini is a summer squash that is native to the Americas. It belongs to the species Cucurbita pepo, along with a few other types of squashes and pumpkins. It usually is dark or light green. The golden zucchini (yellow zucchini), another variety, is orange/deep yellow in color.

Zucchini noodles

Ingredients

  • 6 Zucchini
  • 2 Teaspoons Salt
  • 2-3 Tablespoons butter or butter and oil mixed
  • 1 Clove Garlic. minced (optional)
  • salt and black pepper to taste
  • 1/4 cup grated Parmesan Cheese or any other cheese that you've.
Preparation Time 35 minutes Cooking Time 10 Minutes

Directions

  • Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
  • Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
  • Heat butter and oil in a large skillet over medium high heat. Add  garlic, cook and stir until light brown, add zucchini stir well and cook till tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
