Cucumber-Carrot Pancake

INGREDIENTS
cucumber 1 medium 
carrot 1 medium
green chilies / red chili pdr. to taste
rice flour 1 cup approximately
sour buttermilk  1 cup
water about 1/2 cup
salt to taste
coriander leaves finely chopped 1 tbsp
oil to cook

METHOD
peel and grate cucumber and carrot finely
from grated cucumber squeeze out the water ( which you can use for your face mask or for salad)
to grated carrot and squeezed out cucumber, add buttermilk, green chilies, rice flour, whisk well
add more water to get a thin batter, add salt and coriander leaves
heat a tawa/ pan, add little oil, spread the batter thin, like you'll do for pancake or dosa
spread little oil, once the bottom is brown, flip over and cook the other side till crisp if preferred
serve hot with spiced curd and salad OR it can be eaten plain too.
