CABBAGE-MUSHROOM CHEESY RICE


Ingredients

1 cup raw rice
oil to saute  vegetables
1/2 large onion, chopped
1/3 head cabbage, chopped
3 cloves garlic, sliced
1/3 cup mushrooms, sliced
1/4 teaspoon nutmeg
 chilli pdr. to taste
pepper pdr.  and salt, to taste
2 eggs
1 cup milk
1 cup Cheddar cheese, grated

Method
Preheat oven to 375 degrees F.

Cook the rice as usual. Put into a large, greased casserole dish.

Saute onion, cabbage, mushrooms and garlic in oil till soft. Season with  nutmeg, chilli pdr., salt and black pepper.

Beat together eggs and milk. Pour over rice and stir in.

Stir the cheese into rice.

Carefully stir the cabbage mixture into rice. Bake until hot and bubbling. About 15 to 20 minutes.
