Daikon soup ( radish soup) A Japanese dish makes 6 servings

Ingredients
Radish diced ½ cup          potatoes diced ½ cup        carrots diced ½ cup
Spring onions ½ cup      chop green leaves into small pieces & keep separate
Oil 1 tbsp        ginger minced 1”      water 5 cups       salt to taste
Miso(readymade Japanese soyabean fermented paste) 5-6 tsp
Black pepper to sprinkle

Method
Cut all vegetables into ½” pieces. Heat oil, add ginger & all the vegetables, except spring onion leaves. Sauté for a few minutes, stirring all the time. Add 5 cups of hot water 7 salt to taste. Simmer till vegetables are almost cooked. add miso & green leaves of spring onions. Simmer for a few mniutes. Serve hot with a dash of black pepper.
