Instant Medhu vadai

 INGREDIENTS

rice flour  1 cup

curd   1/2 cup

Salt to taste

Onion 1 chopped fine

Green chilies 2 chopped fine ( can omit if you want to give small kids)

curry leaves  2 srigs chopped fine

coriander leaves a handful chopped fine  

Pepper 1 tsp

jeera/ cumin  1 tsp

oil for frying

 

METHOD

In a bowl add rice flour, curd,salt,water mix well to be like dosa batter.

Put this batter in a pan and cook on medium heat till gets dry enough to roll.

Then remove from fire and let it cool well,

Now add onion, curry and coriander leaves, jeera and pepper and salt if needed

Heat oil in a kadai with enough oil to deep fry the vadais.

Now mix well, and flatten them with a hole in the center, either in your hand or use a banana leaf or a plastic sheet and slowly put the vadai, one by one, in such a way that you can fry 5-6 at a time.

Repeat with remaining batter in the same way, serve hot with coconut chutney.
